L-Carnosine is a dipeptide, i.e. a compound composed of two amino acids, consisting of beta-alanine and histidine. It occurs naturally in the body - mainly in muscles, brain and kidneys, and its levels depend on gender (higher in men), age (decreases with age), and diet (low in vegans and vegetarians). The important functions of carnosine in the metabolic changes taking place in the body can be demonstrated by the fact that in the case of muscles alone, it can constitute as much as 0.5% of their mass.
L-Carnosine is produced in the body as a result of the synthesis from beta-alanine and histidine and undergoes continuous metabolic changes. As the endogenous synthesis of carnosine decreases with age and is largely dependent on the availability of histidine - an amino acid found mainly in food of animal origin - deficiencies of this component may appear especially in the elderly, as well as in people on a vegetarian or vegan diet.
